kathi roll or frankie recipes are one of the simple snacks to make. basically you can attempt this recipe with your leftover curry and chapati. the leftover curry (preferably dry sabzi) is used as stuffing and rolled in a chapati. however, the critical part is the flavoured and lip-smacking frankie masala used in this recipe. in this recipe, i have prepared the masala instantly, by combining the available dry spice powders. some prefer by roasting the dry spices and grounding them to powder, but i prefer this easy way. you may make it in bulk and store in an airtight container so that you can sprinkle it on top of the stuffing whenever you need it. in other words, there isn’t any particular frankie masala for different kathi rolls and it is a generic spice mix.

furthermore, i would also like to highlight some more tips, suggestions and variations to aloo frankie recipe. firstly, in this recipe, i have freshly prepared the roll or chapati with atta and maida combination of 1:1 ratio. you may very well skip the maida, but adding plain flour helps to roll it smoothly. secondly, while stuffing i have added spicy green chutney and tomato sauce for the tanginess. you may also add spicy maggi sauce or spicy red chutney with a combination of tamarind chutney to make it more flavoured and tasty. lastly, if you like to add cheese, add shredded to grated cheddar cheese. avoid using pizza or mozzarella cheese for any kathi roll or frankie recipe.

for roti dough:

  • 1 cup wheat flour
  • 1 cup maida / all-purpose flour
  • ½ tsp salt
  • 2 tbsp oil
  • water, for kneading

for aloo pattice:

  • 2 tbsp oil
  • 2 clove garlic, finely chopped
  • 1 inch ginger, finely chopped
  • 1 chilli, finely chopped
  • 3 tbsp tomato sauce
  • 2 potato / aloo, boiled & mashed
  • 1 cup paneer / cottage cheese, grated
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped
  • oil, for frying

for chilli vinegar:

  • ½ cup vinegar
  • 2 chilli, finely chopped

for frankie masala:

  • 1 tbsp chilli powder
  • ½ tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp chaat masala
  • 1 tsp aamchur
  • ¼ tsp pepper powder
  • ½ tsp salt

for frankie:

  • green chutney
  • onion, finely chopped
  • tomato sauce
  • cheese, grated

Instructions

roti preparation:

  • firstly, in a large bowl take 1 cup wheat flour, 1 cup maida, ½ tsp salt and 2 tbsp oil.

  • mix well making sure everything is well combined.

  • add water as required and knead the dough.

  • knead to a smooth and soft dough. cover and rest for 20 minutes.

  • knead again and pinch a ball sized dough.

  • dust with wheat flour and roll uniformly.

  • add the rolled dough over hot tawa greased with oil.

  • cook for a minute and flip over.

  • grease with oil and cook both the sides of roti.

  • roti is ready. keep aside.

chilli vinegar preparation:

  • firstly, in a small bowl take ½ cup vinegar and 2 chilli.

  • mix well and rest the chilli vinegar for 10 minutes.

frankie masala preparation:

  • firstly, in a small bowl take 1 tbsp chilli powder, ½ tsp turmeric, 1 tsp cumin powder, 1 tsp coriander powder, ½ tsp garam masala.

  • also add1 tsp chaat masala, 1 tsp aamchur, ¼ tsp pepper powder and ½ tsp salt.

  • mix well combining all the spices are well combined. frankie masala is ready.

aloo pattice preparation:

  • firstly, in a large kadai heat2 tbsp oil and saute 2 clove garlic, 1 inch ginger,1 chilli.

  • add3 tbsp tomato sauce and saute for a minute.

  • also, add 1 tbsp of prepared frankie masala and cook for a minute.

  • now add2 potato,1 cup paneer and ½ tsp salt.

  • mix well making sure everything is well combined.

  • further, add 2 tbsp coriander and mix well. aloo mixture is ready.

  • now grease the hand with oil and prepare a pattice.

  • roast on medium flame until it turns golden brown. keep aside.

frankie assembling:

  • firstly, take the roti and spread green chutney.

  • place the pattice over the chutney.

  • top with finely chopped onions, 1 tsp chilli vinegar and prepared frankie masala.

  • also, top with tomato sauce and grate the cheese over it.

  • roll tight and cover with butter paper.

  • finally, enjoy aloo frankie with more tomato sauce.
