“Can you bring something sweet?” How often do we hear this last-minute, stress-inducing, request the night before! Well this indulgent, fancy, truffle-like, flourless cake is the answer. Of course you won’t say anything over the phone other than “I’ll see what I can do”.

Ingredients

225 gDark chocolate, (55-70% cocoa solids) (Main)
160 gButter
6Eggs
140 gBrown sugar
140 gCaster sugar
2 TbspDutch cocoa powder (Main)
125 gGround almonds

Directions

  1. Heat oven to 180C. Line a 23cm springform cake tin with baking paper.
  2. Place chocolate and butter in a bowl and simmer over a pot of water until melted.
  3. Whisk the eggs and sugars together until light, fluffy and triple in size.
  4. Gently fold in the melted chocolate, cocoa and almonds. Pour into the tin and bake for 45 minutes. Allow to cool in the tin. Dust with cocoa or icing sugar.
