As delicious as cobbler is, though, after a while even our most beloved recipes can get boring. That’s why I love making my brown sugar pecan crust variation. It’s a great twist on a classic that requires almost no extra effort which makes it a super easy and extra special dessert perfect for weeknight desserts, potlucks, or parties.

This delicious sweet cobbler starts with an easy strawberry filling that requires no stovetop cooking. Then, I top it with the classic cobbler batter that we all know and love. Finally, I finish it off with a sweet and crunchy brown sugar pecan mixture. Then, I bake the whole thing to golden brown perfection. What I end up with is a cobbler full of classic flavors along with an extra kick of sweetness and crunch thanks to the brown sugar pecan topping. It’s the best cobbler you’ll ever make!

How to Make Strawberry Cobbler Recipe with Brown Sugar Pecan Crust

It’s not any more difficult to make this cobbler than a classic cobbler. The brown sugar pecan topping is made in just a couple of minutes, and outside of that, it’s a classic cobbler recipe.

Step 1: Prep

Preheat the oven to 375 degrees.

Step 2: Make the Strawberry Filling

Remove the stems, rinse, and wash the strawberries. Then cut them into quarters and place them in a large bowl. Add sugar, lemon juice, lemon zest, and cornstarch. Then, stir and let sit for at least 5 minutes. Spray a 9×13 deep baking dish or 3-quart baking dish with nonstick cooking spray and pour the strawberry filling into it immediately.

Step 3: Make the Cobbler Topping

Whisk the flour, sugar, brown sugar, baking powder, and salt in a medium bowl. Then, cut cold butter into the mixture with a fork or pastry cutter until crumbly. Finally, pour boiling water into the mixture and stir until combined. Spoon the mixture over the strawberry filling and spread it evenly to cover the fruit completely.

Step 4: Make the Brown Sugar Pecan Crust

Combine the brown sugar, flour, pecans, and melted butter in a small bowl. Then, sprinkle the mixture over the cobbler topping.

Step 5: Bake

Bake uncovered in the preheated oven for 50 to 55 minutes until the topping is cooked thoroughly and has started to brown. Enjoy with a scoop of vanilla ice cream!

    *Lightly cover with aluminum foil if it starts to brown too much.
