- Depending upon the type of sesame seeds, you will get a darker or lighter tahini paste. Hulled white sesame seeds make less bitter, creamier, whiter tahini while the unhulled sesame seed gives a light brown tahini paste.

- Dry roast on a slow flame for 1 to 2 minutes or till fragrant. Alternatively, you can place the sesame seeds on a baking sheet and toast it in the preheated oven for about 8 to 10 minutes. Toasting the sesame seeds gives the tahini a nuttier flavor.
- Don’t forget to stir the seeds frequently so they get evenly toasted. Do not allow the sesame seeds to turn brown. They should be light golden in colour after roasting.
- Remove from the flame, transfer to a plate and keep aside to cool completely.
- Transfer the sesame seeds to a mixer jar.
- Blend till it is almost smooth.
- Add the olive oil.
- Add little salt.
- Blend it in a mixer till you get a smooth Tahini paste.
- Use the tahini paste as required or store it in an air-tight container.

How long can this paste be kept ?

Very useful. I could add it to many of my dips and sauces to give it a nutty flavor. Also my Lebanese Hummus dip tastes much better after using this paste.
