Butternut squash soupis one of my family’s all-time favourite homemade soups. My husband, kids and my daycare kids (even the picky ones!) go crazy for it. The flavour is incredible!

We call it squash and potato soup, and I imagine you can make it with other varieties of squash, but I always use butternut squash for this recipe.

It’s almost as good as my homemade tomato soupbut that’s more of a summer/fall soup. Butternut squash soup on the other hand, is hearty and filling and much more of a fall and winter soup.

This recipe is so easy, you’ll be making it from memory before you know it.

Part of what it makes this soup so popular with kids, is that once the squash and potatoes are fully cooked, I puree the soup until it’s silky smooth. Most of my kids wouldn’t touch if there were lumps of squash and potato floating in the bowl.

My very favourite way to serve butternut squash soup is with a loaf of my homemade honey-oat bread.The bread is soft and slightly sweet and quite filling. It goes well with the rich, sweet taste of the soup, and when they’re served together, it makes for a really hearty meal.

Ingredients for Butternut Squash and Potato Soup:

  • 4 cups butternut squash, peeled & cubed
  • 2 cups potato, peeled & cubed
  • 1.5 c onion, chopped
  • 2 cloves garlic, crushed/minced (optional)
  • 1/4 c butter
  • 4 c chicken broth
  • 1 c milk

Some butternut squash soup recipes call for celery and carrots, but my recipe does not. All that’s going into this squash soup as far as vegetables go are onions, squash, potatoes and garlic.

It’s super-easy to make! Or should I say soup-er easy. Ha!

How to make your soup:

  1. Saute onions over med heat until clear.
  2. Add garlic, and saute another 30 seconds
  3. Add broth, potatoes and squash. Bring to a boil, and then reduce to simmer for 30 mins (until vegetables are tender).
  4. Remove from heat, and purée until smooth (I use my hand-held immersion blender).
  5. Stir in milk, return to stove-top, and heat through.

Served with a crusty loaf or delicioushomemade dinner rolls, a bowl of this butternut squash soup makes a hearty lunch or dinner.

And for an extra treat, top it with some homemade croutons!

Ingredients
