I always read blog posts about people who have these morning routines where they drink lemon water first thing, followed by some special tea an hour later, and then finally to an elaborate breakfast. While I really appreciate a longer, more drawn out breakfast (like Fajita Tofu Scramble or Pumpkin Spice Waffles), most mornings are prettyrushed and crazy, and you are lucky to make it out the door with your head on! Before I had David, and was working outside of the home, I would just bring some kind of snack bar and a banana to work with me and call it breakfast—I literally would get up less than an hour before I had to BE at work! I am not a morning person. If you are like me, this chia pudding is for you!

These days, believe it or not, I actually have more time in the morning, now that I have to get up in time to get David ready. But with him at my feet, preparing an elaborate breakfast in the kitchen is just not fun, and adds to the chaos. So when I can, I try to prep something for breakfast the night before, when I’m cleaning up from dinner. Oatmeal works well—I can just reheat it the next morning (try my Simple Oatmeal). I sometimes put together smoothies in the blender container and refrigerate overnight so they’re ready to blend up in the morning. But lately I’ve really been into overnight chia porridges—maybe it has something to do with the giant bag of chia seeds I got at Costco this month!

Be forewarned—as you put this together you will think to yourself “If I told my friends what I was making they would think I am crazy!” This is total “hippie” food, the kind that will leave you feeling like you should live on a commune or something! But it is delicious, fast, and super nutritious. I had a bowl this morning for breakfast—I didn’t have lunch until 5 hours afterwards and my morning included a workout and chasing David around at a park and I still wasn’t hungry! Both chia and hemp seeds are packed with protein, as well as healthy omegas, fat, and fiber.

Chia Pudding

This chia pudding is so easy to put together! It takes just 2 minutes to mix it all up and then you pop it into the fridge overnight. When you wake up in the morning it’s ready to go! Look how simple it is to make!

I hope you get a chance to try this quick and easy Chia Pudding! It is a favorite in my house. I like to top mine with fresh fruit, coconut, and sunflower seeds. Hippie Breakfast Bowl

Ingredients

  • ¼ cup hemp seeds hulled
  • ¼ cup chia seeds
  • 1/4 teaspoon cinnamon
  • 1-2 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups non-dairy milk I like to use my milk closer to room temperature so that it mixes better with the coconut oil

Extra Add ins:

  • ¼ cup raisins
  • 1/2 teaspoon almond extract if you can have nuts—so good!

Toppings:

  • Fresh fruit—bananas strawberries, etc.
  • Chopped nuts
  • Shredded coconut
  • sunflower or pumpkin seeds

Instructions

  • Place the chia seeds, hemp seeds, raisins, cinnamon and sweetener, as well as any other add ins into a container (at least 4 cup size) and mix well.

  • Add milk and stir well, mixing up any clumps of chia seeds. Refrigerate overnight. The chia seeds will plump up, absorbing 9-10 times their weight in liquid! The result will be a bit like a tapioca pudding.

  • Stir well in the morning and add more milk if desired. Top with fresh fruit, nuts, and/or shredded coconut. I like to prep my fruits and nuts in the evening too, and then its just dump and eat! How easy is that?

Notes

Cooking time does not reflect the overnight refrigeration required to plump up the chia seeds. Be sure to plan ahead and make this the night before you want to serve it!

Previously I added 2 Tablespoons of melted coconut oil to this chia pudding. As I have made this over the years, I've decided that I don't prefer the coconut oil. If you'd like to add it, feel free to add it at the very beginning, with the chia seeds. But definitely give it a try without—I like it better like that!

      Yep! You can use agave, or any other liquid sweetener if you want. Or chop up some extra dates and mix them in for a bit of sweetness!

      Hi Helen! Yes, you can completely omit the coconut oil, no problem at all! In fact, I made this recipe this week and didn’t add it because I was working quickly 🙂 It’s definitely fine!

    Such a great idea for busy mornings! Although I am one of those morning people that have their lemon water, it’s usually as I drive to work and then I have a quick breakfast when I get there. I could totally bring this to work – yum!

      It usually lasts me about 4 breakfasts! Just depends on how hungry you are!!! I probably eat a 1/2 cup for breakfast with fruit? I hope that helps a little bit—it is super YUMMY!
